Self catering campervan friendly meals




It's always tricky to know what to cook or bring along. Keeping it simple and easy in one or two pans is the best way to go. Less mess, stress and less washing up.


Here are 10 great meal ideas, all perfect for Campervan Retreats.



  1. Bean Chilli - tin of mixed beans, tin of tomatoes, herbs and spices. once warmed together you can add a packet of microwavable rice to the pan and you are good to go.

  2. Chicken fajita wraps are great done in one pan. Chicken cut into strips, onion, peppers, fajita seasoning stir fried then served in wraps.

  3. Omelettes are just brilliant for camping. A 3 egg omelette for 1 with lots of veggies, cheese, I love smoked salmon and spinach on mine too. or try a Spanish omelette. eggs, cheese, chorizo, fried tinned potatoes, tomatoes, garlic, any veg cut up small (e.g. peas, broccoli, sugar snaps, etc) NB: When frying tinned potatoes, make sure you drain and dry them off as much as possible as they hold a lot of moisture and can explode when shallow fried in oil, resulting in oil splatters all over you, and everything within 3 feet!

  4. Pasta with a can of tuna, philadelphia herb and garlic, chopped baby tomatoes and cheese on top is one of my favourites when I'm on a budget and its really filling. Plus you can eat it hot or cold and save some for another meal too.

  5. BBQ! cook around the campfire

  6. A slow cooker is a great gadget to take if you are attending a retreat that has EHU. I love to cook pulled pork and the family adore it. Pork shoulder (remove the skin) tin of tomatoes. garlic, honey, worcestershire sauce. 4 hours high/6-8 hours low. Serve with new potatoes or wraps.

  7. Kebabs - so versatile! Haloumi, salmon, veggies, chicken, pork, fruit, marshmallows!

  8. Pancakes.

  9. Mozzarella Salad on toasted seeded bread. no need to cook anything here: Rocket, peppers, red onions, cucumber, fresh basil, mozzarella, pomegranate seeds, balsamic - it's delicious!

  10. Jacket potatoes wrapped in foil and cooked in the campfire.
